At the moment I'm communicating with the exchanges through the "Ethereum Exchange Workgroup".
Currently, we're working with 11 exchanges (this number is increasing all the time) to help them implement Ether listings in the most secure and user-friendly ways possible.
Note that not all of these 11 exchanges will be listing Ether in the Frontier launch - some will wait for us to move to Homestead.
As we move forward to the launch, we'll release information on which exchanges will be listing Ether in the Frontier to give people time to sign up and send identification etc.
We'll make an announcement two weeks before launch. We're doing our best to deliver a complex product within a reasonable timeline, but software deadlines are rarely hit.

Regarding tracking the release, https://github.com/ethereum/go-ethereum/milestones is the best way to check progress on the GO CLI client, which will be the client at launch.
