I was looking for an updated list of pools and unfortunately I couldn't find any. So I decided to post the ones I know. Please share others I might have missed.
Here they are:
No registration required1.
http://ethereumpool.co/ - 0.8% fees. Payouts released 2 times a day for balances higher than 0.5 ETH.
2.
http://dwarfpool.com/ - 2% fees. Payouts released 4-6 times a day for balances higher than 1 ETH.
3.
http://weipool.org/ - 0% fees. Payouts released every 24 hours for balances higher than 1 ETH.
4.
http://ethpool.org/ - Predictable Solo Mining pool. 0% fees. Payouts after 10 confirmations. More info on

5.
http://nanopool.org/ - PPLNS 1% fees. Payouts released 2 times a day for balances higher than 0.1 ETH.
Requires registration1.
https://eth.suprnova.cc/ - 1% fees. Payouts are up to the miner (Manual or Automatic from 0.01 ETH).

https://coinotron.com - PPLNS 1 % fees. RBPPS 4% fees. Payouts are up to the miner (Manual from 0.1 ETH).

Each submitted share will increase the credit of the miner who submitted the share by the share difficulty.
The miner who accumulated the most credits will receive the reward of the next mined block and his credits will be reset to his current credits minus the credits of the runner up miner.
Usually a miner will receive a full block reward as soon as his accumulated credits equal the current block difficulty (+/- pool luck).
Also ethpool.org was the first Ethereum mining pool.
Pool fee is currently 1%!
The rest of those pools on the list are fine. I can vouch for http://dwarfpool.com/eth, http://ethereumpool.co, and http://ethpool.org, as I have spent time mining on all of them and they are all solid.
However, I have permanently parked my miners on http://ethpool.org since they seem to really have their act together. You can see your account climb the credits list, they have per-worker stats, they reliably payout, and they are also the authors of etherchain.org.

It is Ethereum's first mining pool with decentralized mining process.
Pool fee is currently 0%. Payouts are done automatically 2 times per day with a minimum payout of 1Eth.
